Ingredients

  • Roasting tin juices and browned bits from a cooked chicken
  • 2 tbsp plain flour
  • 500 ml chicken stock
  • 1 tbsp Worcestershire sauce
  • Salt and black pepper

Method

  1. Place roasting tin on the hob over medium heat.
  2. Skim off excess fat, leaving 2 tbsp with the browned bits.
  3. Whisk in flour, cook 1–2 minutes.
  4. Gradually whisk in stock, scraping up browned bits.
  5. Simmer 5–6 minutes until thickened.
  6. Stir in Worcestershire sauce, season.
  7. Strain into a warmed jug, serve.

Notes

Don't wash the roasting tin before starting — the browned bits carry the flavour.
Cook the roux properly before adding liquid to avoid a raw, floury taste.
Strain for a completely smooth gravy.
Freezes well for up to 3 months.
