Ingredients

  • 400 g spaghetti
  • 150 g pancetta or guanciale diced
  • 4 large egg yolks plus 1 whole egg
  • 60 g Pecorino Romano finely grated, plus extra to serve
  • 30 g Parmesan finely grated
  • Freshly ground black pepper
  • Salt for the pasta water

Method

  1. Cook spaghetti in salted water until al dente.
  2. Crisp pancetta in a cold pan over medium heat 6–8 minutes.
  3. Whisk egg yolks, whole egg, cheeses and pepper.
  4. Reserve a mug of pasta water, then drain pasta.
  5. Toss pasta with pancetta, remove pan from heat.
  6. Pour in egg mixture, toss constantly, loosening with pasta water.
  7. Serve immediately with extra Pecorino and black pepper.

Notes

Take the pan off the heat before adding the egg mixture to avoid scrambling.
Use starchy pasta water gradually to emulsify the sauce.
Best eaten immediately — doesn’t hold or reheat well.
No cream is used in a traditional carbonara.
