Ingredients

  • Cauliflower:
  • 1 large cauliflower cut into florets
  • 100 g plain flour
  • 50 g cornflour
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 200 ml cold sparkling water
  • Vegetable oil for frying
  • Sauce:
  • 4 tbsp mayonnaise
  • 3 tbsp sweet chilli sauce
  • 1 –2 tbsp sriracha
  • 1 tsp rice vinegar
  • To Finish:
  • 2 spring onions finely sliced
  • 1 tsp sesame seeds

Method

  1. Whisk sauce ingredients together, set aside.
  2. Whisk batter ingredients with cold sparkling water.
  3. Heat oil to 180°C.
  4. Dip florets in batter, fry in batches 4–5 minutes until golden.
  5. Drain briefly.
  6. Toss hot cauliflower in sauce.
  7. Scatter with spring onions and sesame seeds, serve immediately.

Notes

Cold sparkling water gives a lighter, crisper batter.
Toss in sauce at the last moment to keep the coating crisp.
Fry in small batches to keep the oil temperature steady.
Best eaten immediately, straight after sauce is added.
