Ingredients

  • 500 g strong white bread flour
  • 7 g fast-action dried yeast
  • 2 tsp salt
  • 1 tbsp caster sugar
  • 320 ml warm water
  • 2 tbsp olive oil

Method

  1. Mix flour, yeast, salt and sugar.
  2. Add water and oil, mix to a rough dough.
  3. Knead 8–10 minutes until smooth and elastic.
  4. First rise 1–1.5 hours until doubled.
  5. Knock back, shape, place in a loaf tin.
  6. Second rise 30–45 minutes.
  7. Bake at 220°C / 200°C fan / Gas 7 for 25–30 minutes.
  8. Cool completely on a wire rack before slicing.

Notes

A full second rise is essential for a light, even crumb.
Knead thoroughly to properly develop the gluten structure.
Tap the base to check doneness rather than relying on colour alone.
Freezes very well for up to 3 months, whole or sliced.
