Ingredients

  • 250 g chestnut mushrooms roughly chopped
  • 1 tbsp olive oil
  • 1 x 400g tin black beans drained and rinsed
  • 60 g rolled oats
  • 1 small onion finely diced
  • 2 garlic cloves finely chopped
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 egg
  • 30 g breadcrumbs
  • Salt and black pepper
  • 1 tbsp vegetable oil
  • 4 burger buns and toppings

Method

  1. Roast mushrooms at 200°C / 180°C fan / Gas 6 for 20 minutes. Chop finely.
  2. Cook onion 5–6 minutes, add garlic 1 minute. Cool.
  3. Mash black beans, leaving some texture.
  4. Combine mushrooms, onion mixture, oats, spices, egg and breadcrumbs into beans. Season.
  5. Shape into 4 patties, chill 30 minutes.
  6. Fry 4–5 minutes per side until golden and firm.
  7. Serve in toasted buns with toppings.

Notes

Roasting the mushrooms first is essential to avoid a wet, crumbly patty.
Chilling before cooking helps the burgers hold their shape under heat.
Uncooked patties freeze well for up to 3 months.
Can be made vegan with a flax egg in place of the regular egg.
