Ingredients

  • 1 whole turkey 5–6kg
  • 150 g unsalted butter softened
  • 2 tbsp fresh thyme chopped
  • 2 tbsp fresh sage chopped
  • Zest of 1 lemon
  • 4 garlic cloves crushed
  • Salt and black pepper
  • 1 lemon halved
  • 1 onion quartered
  • 4 sprigs fresh rosemary
  • 500 ml chicken or turkey stock
  • 2 tbsp olive oil

Method

  1. Mix butter with herbs, lemon zest, and garlic.
  2. Loosen skin over breast, push butter underneath.
  3. Stuff cavity with lemon, onion, rosemary.
  4. Rub outside with oil, season generously.
  5. Roast at 220°C / 200°C fan / Gas 7 for 30 minutes with stock in tin.
  6. Reduce to 180°C / 160°C fan / Gas 4, tent breast with foil, roast 2.5–3 hours, basting every 45 minutes.
  7. Check thigh reaches 74°C.
  8. Rest 30 minutes before carving.

Notes

Herb butter under the skin is the key step for moist breast meat.
A meat thermometer removes the guesswork — target 74°C in the thigh.
Rest for a full 30 minutes before carving.
Leftover meat freezes for up to 3 months.
