Ingredients

  • 2 x 400ml tins full-fat coconut milk
  • 3 –4 tbsp Thai green curry paste
  • 500 g chicken thigh fillets sliced
  • 1 aubergine cut into chunks
  • 150 g green beans trimmed and halved
  • 4 kaffir lime leaves
  • 1 tbsp fish sauce
  • 2 tsp palm sugar or light brown sugar
  • Juice of 1 lime
  • Small handful of Thai basil or coriander
  • Steamed jasmine rice to serve

Method

  1. Fry paste in thick coconut cream 2–3 minutes until fragrant.
  2. Add chicken, cook 3–4 minutes.
  3. Add remaining coconut milk and lime leaves, simmer.
  4. Add aubergine, simmer 10 minutes.
  5. Add green beans, cook 5 minutes.
  6. Stir in fish sauce and sugar, adjust balance.
  7. Off the heat, stir in lime juice.
  8. Scatter with basil, serve with rice.

Notes

Fry the paste in coconut cream until the oil splits.
Simmer gently to keep the coconut milk smooth.
Balance fish sauce, sugar and lime to taste at the end.
Freezes well for up to 3 months.
