Ingredients

  • 25 g unsalted butter
  • 1 tbsp olive oil
  • 1 onion finely diced
  • 2 garlic cloves finely chopped
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 300 g basmati rice rinsed
  • 600 ml chicken or fish stock hot
  • 400 g raw king prawns peeled and deveined
  • Juice of 1/2 lemon
  • Handful of fresh coriander chopped
  • Salt and black pepper

Method

  1. Cook onion in butter and oil 6–8 minutes, add garlic 1 minute.
  2. Stir in spices 30 seconds, add rice, toast 1–2 minutes.
  3. Add hot stock and salt, boil, then cover and cook on low 12 minutes.
  4. Lay prawns on top, cover, cook 5–6 minutes more.
  5. Rest 5 minutes off the heat.
  6. Fluff, stir through lemon juice and coriander.

Notes

Rinse the rice to remove surface starch for fluffier grains.
Add the prawns last so they steam gently and stay tender.
Keep the lid on tightly throughout cooking.
Not suitable for freezing, as the prawns turn rubbery.
