Ingredients

  • 500 g raw king prawns peeled and deveined
  • 2 tbsp vegetable oil
  • 1 large onion finely diced
  • 3 garlic cloves finely chopped
  • 1 tbsp grated fresh ginger
  • 1 green chilli finely chopped
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp garam masala
  • 1 x 400g tin chopped tomatoes
  • 1 x 400ml tin coconut milk
  • Juice of 1/2 lime
  • Salt to taste
  • Fresh coriander chopped
  • Basmati rice to serve

Method

  1. Cook onion 8 minutes until golden.
  2. Add garlic, ginger and chilli, cook 2 minutes.
  3. Add ground spices, cook 1 minute.
  4. Stir in tomatoes, cook 5 minutes.
  5. Add coconut milk, simmer 10 minutes. Season and taste.
  6. Add prawns, cook 2–3 minutes until opaque.
  7. Stir in lime juice off the heat, garnish with coriander, serve with rice.

Notes

Add prawns only in the final 2–3 minutes to keep them tender.
Toast the ground spices before adding liquid for the best flavour.
Freeze the sauce alone and add fresh prawns when reheating.
Use raw prawns, not pre-cooked, to avoid overcooking.
