Ingredients

  • 300 g pork mince
  • 200 g raw prawns peeled, deveined and finely chopped
  • 2 spring onions finely sliced
  • 2 garlic cloves finely chopped
  • 1 tbsp grated fresh ginger
  • 1 tbsp light soy sauce
  • 1 tsp sesame oil
  • 1 egg
  • 2 tbsp cornflour
  • Vegetable oil for frying
  • Sweet chilli sauce to serve

Method

  1. Finely chop prawns, squeeze out excess liquid.
  2. Combine with pork, spring onions, garlic, ginger, soy sauce and sesame oil.
  3. Add egg and cornflour, mix until tacky.
  4. Shape into balls.
  5. Heat oil to 170–180°C.
  6. Fry in batches 5–6 minutes until golden.
  7. Drain, serve with sweet chilli sauce.

Notes

Chop prawns by hand for better texture than blitzing them smooth.
Squeeze out excess moisture from the prawns before mixing.
Raw or cooked balls freeze well for up to 2 months.
Keep oil temperature consistent for even, crisp results.
