Ingredients

  • 300 g dried yellow split peas soaked overnight
  • 1 litre ham or gammon stock
  • 1 small onion halved
  • 1 bay leaf
  • 30 g unsalted butter
  • Salt and black pepper
  • 1/4 tsp ground mace or nutmeg optional

Method

  1. Drain and rinse soaked peas.
  2. Simmer with stock, onion and bay leaf for 45–60 minutes until soft.
  3. Remove onion and bay leaf.
  4. Blitz hot mixture until smooth.
  5. Stir in butter.
  6. Season with mace and salt and pepper.
  7. Serve warm alongside gammon or ham.

Notes

Soaking the peas overnight is essential for even, complete softening.
Ham stock gives far more depth of flavour than water or plain vegetable stock.
Blend while hot for the smoothest texture.
Freezes well for up to 3 months.
