Ingredients

  • 280 g plain flour
  • 150 g caster sugar
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 large eggs
  • 200 ml whole milk
  • 100 ml vegetable oil
  • 1 tsp vanilla extract
  • 2 ripe but firm pears peeled, cored and diced
  • 80 g granola
  • 1 tbsp demerara sugar

Method

  1. Preheat oven to 190°C / 170°C fan / Gas 5. Line muffin tin.
  2. Whisk flour, sugar, baking powder, cinnamon and salt.
  3. Whisk eggs, milk, oil and vanilla.
  4. Combine wet and dry, mixing minimally.
  5. Fold in diced pears.
  6. Fill cases, top with granola and demerara sugar.
  7. Bake 20–25 minutes until golden and a skewer comes out clean.
  8. Cool in tin 5 minutes, then on a wire rack.

Notes

Use firm, ripe pears rather than overripe ones to avoid a wet batter.
Keep the granola as a topping so it stays crunchy.
Dice the pears small so they distribute evenly through the batter.
Freezes well for up to 2 months, though the topping softens slightly.
