Ingredients

  • Filling:
  • 1 kg ripe peaches peeled and sliced
  • 80 g caster sugar
  • 1 tbsp cornflour
  • 1 tsp vanilla extract
  • Juice of 1/2 lemon
  • Topping:
  • 200 g self-raising flour
  • 60 g caster sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 100 g cold unsalted butter cubed
  • 120 ml whole milk
  • 1 tbsp demerara sugar

Method

  1. Cook peaches with sugar, cornflour, vanilla and lemon juice 6–8 minutes until thickened.
  2. Transfer to a baking dish.
  3. Whisk flour, sugar, baking powder and salt, rub in butter.
  4. Stir in milk until just combined.
  5. Dollop topping over filling, leaving gaps.
  6. Sprinkle with demerara sugar.
  7. Bake at 190°C / 170°C fan / Gas 5 for 30–35 minutes.
  8. Rest 10 minutes before serving.

Notes

Thicken the filling on the hob first to avoid a watery cobbler.
Don't overmix the topping, to keep it light rather than tough.
Leave gaps in the topping for the fruit to bubble through.
Freezes reasonably well for up to 2 months.
