Ingredients

  • 1 litre water
  • 10 g dried kombu
  • 15 g bonito flakes
  • 3 tbsp miso paste
  • 200 g silken tofu cut into small cubes
  • 2 spring onions finely sliced

Method

  1. Heat water and kombu gently 8–10 minutes, remove kombu before boiling.
  2. Simmer, add bonito flakes, remove from heat, steep 2–3 minutes.
  3. Strain into a clean pan.
  4. Simmer, add tofu, warm 1–2 minutes.
  5. Dissolve miso in a little warm dashi, stir back into pan over low heat.
  6. Warm gently without boiling.
  7. Serve with spring onions.

Notes

A proper dashi base is essential for authentic flavour.
Never let the soup boil once miso is added.
Dissolve miso in warm dashi first to avoid lumps.
Best served fresh; doesn't hold or freeze well once finished.
