Ingredients

  • 3 tbsp olive oil
  • 1 large onion finely diced
  • 2 carrots diced
  • 2 celery sticks diced
  • 3 garlic cloves finely chopped
  • 2 courgettes diced
  • 1 x 400g tin chopped tomatoes
  • 2 tbsp tomato purée
  • 1.5 litres vegetable or chicken stock
  • 1 Parmesan rind
  • 1 x 400g tin cannellini beans drained
  • 100 g small pasta
  • 100 g green beans chopped
  • 2 handfuls spinach or cavolo nero
  • Salt and black pepper
  • Fresh basil and Parmesan to serve

Method

  1. Cook onion, carrot, celery 10–12 minutes. Add garlic.
  2. Add purée and tomatoes, cook 3–4 minutes.
  3. Add stock and Parmesan rind, simmer 15 minutes.
  4. Add courgettes, green beans and cannellini beans, simmer 10 minutes.
  5. Add pasta, cook 8–10 minutes.
  6. Add greens, cook 2 minutes.
  7. Remove rind, season generously.
  8. Serve with basil and Parmesan.

Notes

Cook the soffritto slowly for a deeper, sweeter base.
A Parmesan rind adds savoury depth to the broth.
Freeze without the pasta for the best texture.
Add vegetables in stages so nothing overcooks.
