Ingredients

  • Meatballs:
  • 500 g beef mince
  • 50 g fresh breadcrumbs
  • 1 egg
  • 2 garlic cloves finely chopped
  • 2 tbsp fresh parsley chopped
  • 30 g Parmesan finely grated
  • Salt and black pepper
  • 2 tbsp olive oil
  • Marinara:
  • 1 tbsp olive oil
  • 1 small onion finely diced
  • 2 garlic cloves finely chopped
  • 2 x 400g tins chopped tomatoes
  • 1 tbsp tomato purée
  • 1 tsp dried oregano
  • Pinch of sugar
  • Salt and black pepper
  • To Assemble:
  • 4 sub rolls split
  • 150 g mozzarella sliced
  • Fresh basil leaves

Method

  1. Mix meatball ingredients, shape into 16 balls.
  2. Sear meatballs in batches, 6–8 minutes. Remove.
  3. Cook onion 5 minutes, add garlic 1 minute.
  4. Add tomatoes, purée, oregano, sugar. Simmer 15 minutes.
  5. Return meatballs to sauce, cover, simmer 10–12 minutes.
  6. Toast sub rolls under the grill.
  7. Fill with meatballs, marinara, and mozzarella. Grill until melted. Top with basil.

Notes

Handle the meatball mixture gently to keep the texture tender.
Simmer the marinara until thick before assembling, to avoid a soggy roll.
Meatballs and sauce freeze well together for up to 3 months.
Assemble subs fresh rather than storing them already filled.
