Ingredients

  • Meatballs:
  • 400 g beef mince
  • 40 g fresh breadcrumbs
  • 1 small egg
  • 1 garlic clove finely chopped
  • 2 tbsp fresh parsley chopped
  • Salt and black pepper
  • 1 tbsp olive oil
  • Broth:
  • 1 tbsp olive oil
  • 1 onion finely diced
  • 2 carrots diced
  • 2 celery sticks diced
  • 2 garlic cloves finely chopped
  • 1 x 400g tin chopped tomatoes
  • 1 litre beef or chicken stock
  • 1 tsp dried oregano
  • 80 g small pasta
  • Handful of fresh basil torn

Method

  1. Mix and shape meatball ingredients into small balls.
  2. Sear meatballs in batches, 3–4 minutes. Remove.
  3. Cook onion, carrot, celery 8 minutes. Add garlic 1 minute.
  4. Add tomatoes, stock and oregano. Simmer.
  5. Add pasta, cook 8–10 minutes.
  6. Return meatballs, cook final 5 minutes.
  7. Stir through basil, season, serve.

Notes

Keep meatballs small so they cook through quickly without clouding the broth.
Sear before adding to the broth for better colour and flavour.
Freezes well without the pasta; add pasta fresh when reheating.
Adjust seasoning at the end, as stock brands vary in saltiness.
