Ingredients

  • 400 g macaroni
  • 60 g unsalted butter
  • 60 g plain flour
  • 800 ml whole milk warmed
  • 1 tsp English mustard
  • 1/4 tsp freshly grated nutmeg
  • 150 g mature cheddar grated
  • 100 g Gruyère grated
  • 30 g Parmesan finely grated
  • Salt and black pepper
  • 40 g fresh breadcrumbs
  • 20 g extra Parmesan for topping

Method

  1. Cook macaroni until al dente. Drain.
  2. Melt butter, whisk in flour, cook 1 minute.
  3. Gradually whisk in warm milk until thickened, 5–6 minutes.
  4. Stir in mustard and nutmeg.
  5. Off the heat, stir in cheeses until melted. Season.
  6. Combine with cooked macaroni.
  7. Transfer to a baking dish, top with breadcrumbs and Parmesan.
  8. Grill 8–10 minutes until golden.
  9. Rest 2–3 minutes before serving.

Notes

Cook pasta slightly underdone, as it finishes cooking in the sauce and under the grill.
Use a mix of cheeses for a more complex flavour.
Add cheese off the heat to keep the sauce smooth rather than grainy.
Freezes reasonably well for up to 2 months.
