Ingredients

  • Patties:
  • 700 g lamb mince
  • 2 garlic cloves finely chopped
  • 1 tsp ground cumin
  • Salt and black pepper
  • 1 tbsp olive oil
  • Whipped Feta:
  • 150 g feta crumbled
  • 2 tbsp Greek yoghurt
  • 1 tbsp olive oil
  • 1 tbsp fresh mint chopped
  • To Build:
  • 4 brioche buns split
  • 4 lettuce leaves
  • 1 tomato sliced
  • 1/2 red onion thinly sliced

Method

  1. Mix lamb, garlic and cumin. Season.
  2. Shape into 4 patties with a shallow dimple.
  3. Blend feta, yoghurt and olive oil, stir through mint.
  4. Cook patties 3–4 minutes per side.
  5. Toast buns.
  6. Spread feta, layer lettuce, patty, tomato and onion.

Notes

Keep the spicing simple to let the lamb's natural flavour lead.
Cook to at least medium, as lamb mince is best slightly more done than rare beef.
Raw patties freeze well for up to 3 months.
Whipped feta can be made ahead and keeps for up to 3 days.
