Ingredients

  • 1 kg ripe tomatoes roughly chopped
  • 1 red pepper deseeded and chopped
  • 1 cucumber peeled and chopped
  • 1/2 small onion roughly chopped
  • 1 garlic clove
  • 50 g stale white bread torn
  • 3 tbsp extra virgin olive oil plus extra to serve
  • 2 tbsp sherry vinegar
  • Salt and black pepper
  • Ice cubes to serve

Method

  1. Soak bread in water 5 minutes, squeeze out excess.
  2. Blend tomatoes, pepper, cucumber, onion, garlic and bread until smooth.
  3. Drizzle in oil and vinegar while blending.
  4. Strain through a sieve if desired.
  5. Season to taste.
  6. Chill for at least 2 hours.
  7. Serve cold with ice cubes and a drizzle of olive oil.

Notes

Use the ripest, best-quality tomatoes available, as they carry the whole dish.
Chill for at least 2 hours before serving to let the flavours settle.
Not suitable for freezing, as the texture changes on thawing.
Adjust seasoning again just before serving, as chilling can mute the flavour slightly.
