Ingredients

  • 800 g Maris Piper or King Edward potatoes peeled
  • Vegetable oil for deep frying
  • Salt
  • 8 slices soft white bread
  • 80 g salted butter softened
  • Tomato ketchup or brown sauce

Method

  1. Cut potatoes into thick chips, rinse and dry thoroughly.
  2. Fry at 140°C for 6–8 minutes until soft with no colour. Drain and cool 10 minutes.
  3. Fry again at 190°C for 3–4 minutes until golden and crisp.
  4. Drain and salt generously.
  5. Butter bread generously to the edges.
  6. Pile chips onto bread, add sauce, top and press gently. Serve immediately.

Notes

Double-frying is what gives the chips a shell strong enough to survive inside bread.
Dry the chips thoroughly before frying to avoid spitting and soggy results.
Blanched chips from the first fry freeze well for up to 3 months.
Assemble and eat immediately for the best texture.
