Ingredients

  • 1 large celeriac peeled and chopped
  • 1 onion roughly chopped
  • 3 tbsp olive oil
  • 3 garlic cloves whole and unpeeled
  • 2 sprigs fresh thyme
  • 1 litre vegetable or chicken stock
  • 100 ml double cream
  • Salt and black pepper

Method

  1. Roast celeriac, onion, garlic and thyme at 200°C / 180°C fan / Gas 6 for 30–35 minutes.
  2. Squeeze garlic from skins, discard thyme stalks.
  3. Combine with stock in a pot, simmer 10 minutes.
  4. Blitz until smooth. Sieve for extra silkiness if desired.
  5. Stir in cream, warm gently without boiling.
  6. Season, serve hot.

Notes

Roasting the celeriac first is key to a deeper, nuttier flavour.
Sieve after blending for a completely smooth, restaurant-style finish.
Freezes well without the cream; stir it in fresh after reheating.
Go easy on the thyme so it doesn't overpower the celeriac.
