Gordon Ramsay Best Hamburger Recipe

My Gordon Ramsay-style best hamburger recipe — properly seasoned beef patties, a hard sear, and a build that doesn't overwhelm the meat.

Ingredients

  • Patties:
  • 800 g beef mince 20% fat
  • Salt and black pepper
  • 1 tbsp vegetable oil
  • 4 slices cheddar or American cheese optional
  • To Build:
  • 4 brioche buns split
  • 25 g unsalted butter softened
  • 4 tbsp burger sauce
  • 4 lettuce leaves
  • 2 tomatoes sliced
  • 1/2 red onion thinly sliced
  • 8 slices dill pickle

Method

  1. Divide mince into 4, shape into 2cm-thick patties with a shallow centre dimple.
  2. Season both sides just before cooking.
  3. Heat oil in cast iron pan until very hot.
  4. Sear patties 3 minutes without moving, flip, cook 2–3 minutes more.
  5. Add cheese in final minute, if using.
  6. Toast buttered buns cut-side down, 1–2 minutes.
  7. Build with sauce, lettuce, patty, tomato, onion, pickles.

Notes

20% fat mince is essential for a juicy result — don't substitute lean mince.
Season just before cooking, not in advance.
Raw shaped patties freeze well for up to 3 months.
Don't press down on the patty while it cooks — this pushes out the juices.
