Ingredients

  • 4 very ripe bananas mashed
  • 120 g unsalted butter
  • 180 g light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 250 g plain flour
  • 1 tsp bicarbonate of soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 80 g walnuts or chocolate chips optional

Method

  1. Preheat oven to 170°C / 150°C fan / Gas 3. Grease and line a loaf tin.
  2. Brown the butter, cool 10 minutes.
  3. Whisk in sugar, then eggs and vanilla.
  4. Stir in mashed bananas.
  5. Sift in flour, bicarbonate of soda, cinnamon and salt. Fold gently.
  6. Fold in walnuts or chocolate chips.
  7. Bake 55–65 minutes until a skewer comes out clean.
  8. Cool in tin 15 minutes, then on a wire rack.

Notes

Use the ripest bananas you can, with blackened skins, for the best flavour.
Browning the butter adds a nutty depth worth the extra few minutes.
Cover loosely with foil after 40 minutes if browning too quickly.
Freezes well for up to 3 months, whole or in slices.
