Ingredients

  • Base:
  • 1 sponge cake sliced into a 2cm layer
  • 1 litre vanilla ice cream slightly softened
  • Meringue:
  • 6 large egg whites
  • Pinch of salt
  • 300 g caster sugar
  • To Flambé:
  • 3 tbsp dark rum or brandy warmed

Method

  1. Line a bowl with cling film, press in softened ice cream.
  2. Top with sliced sponge, fold cling film over.
  3. Freeze at least 4 hours, ideally overnight.
  4. Whisk egg whites and salt to soft peaks, gradually add sugar to stiff, glossy peaks.
  5. Turn out frozen dome, remove cling film.
  6. Cover completely with meringue, creating peaks.
  7. Bake at 220°C / 200°C fan / Gas 7 for 3–4 minutes until golden.
  8. Flambé with warmed rum, serve immediately.

Notes

Freeze the base thoroughly, ideally overnight, before adding the meringue.
Cover the dome completely with meringue, leaving no gaps exposed.
Take proper care when flambéing, away from anything overhead.
Base freezes well for up to 1 month without the meringue.
